VEGAN BAKED OATMEAL

Have you ever been torn between eating cake for breakfast and making good choices? Yeah, me too. So, after searching Pinterest and Google for delicious and healthy recipes, I have created the ultimate breakfast “cake” aka baked oatmeal. Your kids will be thrilled that you would serve cake for breakfast and you will be shocked how good oatmeal can really taste!
One thing I love about this recipe is that truly anyone can make it. If you are new to healthy eating, or just trying to step up from a bagel or cereal every morning this delicious vegan baked oatmeal for you!
*This recipe makes two adult servings

INGREDIENTS
1 banana
1 cup Oats
1 cup Oat Milk or Almond Milk
1/2 cup Apple Sauce (unsweetened)
2 tbsp Chia Seeds (optional)
2 tbsp Peanut Butter (or alternative nut butter)
1.5 tsp Cinnamon
1/2 tsp Baking Powder
A splash Vanilla (optional)
A few Chocolate Chips (or blueberries)
METHOD
Preheat oven to 400°
Add all ingredients except chocolate chips to a blender or food processor and blend for roughly 7 seconds or until it looks smooth.
Pour batter into two ramekins and sprinkle chocolate chips on top
Bake at 400° for roughly 30 minutes and enjoy
