SUMMER PASTA SALAD

With temperatures rising and fruits and veggies at peak deliciousness I am so ready to incorporate fresh produce into every meal. If you are a regular on the blog you know I am not a fan of recipes taking more than a few minutes or requiring a long list of ingredients, so I am here to share another quick, tasty, and healthy summer recipe that is full of flavor and a solid go-to recipe for every summer occasion.


My summer pasta salad is so easy, only uses seven ingredients, and is healthy and refreshing. The best part of all, kids love it! If you have kiddos that are big pasta fans, but won’t touch vegetables, this is a great way to introduce veggies into a meal. The ingredients are easy to prep and take less than 15 minutes from start to finish. Below is my fool proof recipe that can be jazzed up in anyway your family likes. A few of my favorite add-in’s to elevate this recipe include avocado, olives, red onion, hard boiled egg, ham slices, and chopped spinach. The salad dressing I swear by for pasta salad of any type is Newman’s Own Classic Oil & Vinegar Dressing because it goes well with everything and I have yet to meet someone who doesn’t like it. This recipe is great for using leftover pasta and makes an easy lunch for the kids the next day. So, enough chatting, here is my delicious and healthy summer pasta salad.

INGREDIENTS

1 box of vegetable rotini (cooked & chilled)

1 pint of cherry tomatoes (halved)

1 English cucumber (sliced and quartered)

6oz Black olives

Sprinkle of feta cheese

2-4 tablespoons of Newman’s Own Oil & Vinegar

2 tablespoons of everything but the bagel seasoning


METHOD

Combine all ingredients & toss lightly 

Serve & enjoy!
