FALL VEGGIE HASH

So last night we got back from Whole Foods and I realized we bough a lot of ingredients, but not really anything for a meal. You know? Its actually my worst habit, and something I haven’t quite mastered is grocery shopping efficiently. What can I say, I am a work in progress. So anyway, I figured I would just start chopping up veggies and see what happened. Shockingly, it was incredibly healthy and delicious and I knew right away I had to share.


If you’ve been around the blog before, you know this must be an easy recipe because I don’t have patience for complicated things when the kids are running around saying “I’m hungry!”. This is the easiest Fall Veggie Hash you will ever try and the results are delicious. Now, this is a very vague non-recipe because I measured with my stomach and not the many measuring cups I have. Good news, it’s a pretty hard recipe to mess up!


INGREDIENTS

  • 2 Large Zucchini

  • 1 Red Bell Pepper

  • 1 Yellow Bell Pepper

  • 1 Small Yellow Onion

  • 1 Package of Chicken Sausage

  • 1 Tbsp of Minced Garlic

  • 1 Tsp Salt (or to taste)

  • Drizzle of Avocado Oil

METHOD

  1. Chop veggies and sausage into medium size pieces. The zucchini I halved and chopped in 1/4″ thick chunks, the Bell peppers into roughly 1″ pieces, and the onion I diced. Finally chop the sausage into small 1/4″ thick pieces.

  2. Brown the sausage in a pan with a small amount of oil.

  3. Remove sausage from pan and add in all other ingredients to medium high heat. Cook for roughly 20 minutes or until the zucchini and onion are soft and cooked through, stirring regularly.

  4. Add the Sausage back in and cook on low for another 5 minutes.

  5. Serve!


Want to make the recipe vegan? Remove the sausage or sub it with your favorite plant based meat substitute. Sub the butter with plant based butter and you’ve got a delicious & vegan Fall Veggie Hash
