5 INGREDIENT POT ROAST

This 5 minute, 5 ingredient pot roast is the ultimate easy week night diner for work from home/ stay at home families. I say this because the veggies need added 3 hours before being served and most families who are at work/school during the day aren’t able to be home 3 hours before dinner to serve. My favorite thing about this recipe is that anyone…literally anyone can make fall apart, juicy, and deliciously flavorful pot roast.


The only ingredients you need are a quality pot roast, pot roast seasoning packet, beef broth or bone broth, carrots, and potatoes. Optionally, if you want to add a gravy you will need a tablespoon of cornstarch. We prefer grass fed beef chuck roast about 2-3 lbs, it is a high quality cut of meat and there is less fat, but it still falls apart and stays juicy. We love russet potatoes and baby cut carrots, but you can play around with the type of potatoes and carrots that you like best. You can use any brand of pot roast seasoning that you like, but I will always be a fan of the crockpot brand. You will need a 6qt crockpot or larger for this, if you don’t have a large crockpot, half the recipe. Lastly, Crockpot liners are the best invention in cooking because they eliminate cleanup all together. The only thing better than dinner taking 5 minutes? Not having to do the dishes!


Before we jump in to the details, I want to emphasize the importance of timing here. The meat needs to be in the crockpot for at least 8 hours. It will get tough before it softens and falls apart, so don’t panic like I did the first time and think you’ve ruined it. The vegetables should not be in more than 2 hours on low, or they can get very mushy.

INGREDIENTS

  • 32 oz               beef broth or bone broth

  • 2-3lb                chuck roast

  • 1 packet          Pot roast seasoning

  • 3-4lbs              Russet Potatoes

  • 12oz                Baby Carrots

  • 1tbsp               Cornstarch (optional)

METHOD

  1. Line the crock pot turn to high

  2. Add the beef broth, chuck roast, and seasoning. Let cook for 5 hours.

  3. After 5 hours, add the carrots, and depending on the size of the potatoes, cut them so they are no larger than roughly 2 ½ sq inches.

  4. Cook for 3 more hours.

  5. Shred the roast and serve


If you wish to add a quick gravy, begin this 25 minutes before you are ready to serve.

  1. Scoop 2 cups of broth from the crockpot and add to a sauce pan and put on medium high heat.

  2. Mix 2 tbsp of cornstarch with ¼ cup of very warm water until dissolved and add to the broth.

  3. Mix constantly for roughly 5 minutes. If you stop mixing, the cornstarch may split and begin to clump.

  4. Turn up heat until a slow bubble and stir every couple of minutes for 20 minutes until thickened.
